How do i catch fish at night? (in a lake)?

i fish in my lake all the time and catch bass mostly, sometimes sunnys, perch, and crappies. there might even be some catfish or trout but i never caught one. when i go late at night i can see ALOT of fish coming to the surface and splashing around then quickly go back under. like they are eating something. Does this sound common and does it sound like a specific type of fish? ALSO how can i catch fish very late at night like 10 o clock? wat bait should i use what areas of the lake, and anything that will help me catch fish late at night! they dont seem to bite at that time of night.
